Named for cheesemaker Bettyann’s first goat "Shirley." Surface-ripened, cheese. A coating of ash applied before bloom balances the acidity and enhances the creaminess. As it ripens from the rind inward it softens and becomes creamier. The rind is edible. Bloomy rind goat cheeses enhance in flavor as they age resulting in a delectable blend of mushroomy, earthy rind and a creamy soft center.
