We specialize in fresh goat milk cheese. All are hand-crafted in small batches by resident cheesemaker (and winemaker) Bettyann Spenker with milk from our own herd of dairy goats. To give our cheeses the best flavor we take special care from start to finish. The goats are fed the best so the milk comes out sweet and creamy. The milk is chilled quickly and handled very gently from the milkline to the vat and throughout the cheesemaking process. The milk is not "standardized" so it changes throughout the season for a truly artisan food experience.
