This pressed, plain Italian-style cheese is based on a recipe cheese-maker, Bettyann, has been perfecting since she began cheesemaking. It is aged for several weeks to months. It is semi-soft and perfect for snacking. It has mild nutty undertones that become more pronounced with age. Unopened packages can be aged for several months.
The cheese is names for the soft refreshing breezes that come off the Delta to our west and cool the farm most summer evenings.
